Kind of cool.. i wonder how a single wheel trailer would fair in off road applications? Arent those made to pulled behind a motorcycle on the street?

no, they were made to pull behind a car. they had a funky bumper hitch that used two 1" balls bolted to a bumper if I remember correctly. I would not want to take it off road, they used a tiny 4.80x8 wheel. here is a Heilite one wheel trailer website link:
