Well Its time for one more step to doing things completly on our own. And after a few years a messing around with a lure jenson lil chief smoker from a garage sale. Time to get serious, (or is it time for smoked goose, summer sausages, real snack stick jerkys, maybe some home made cheese....)

2 sheets of plywood
6 2x2's
# or so of screws
and old hot plate and skillet
left over tin from the roof
and a 1/2 roll of 1/4' harware cloth
roll of weather stripping felt and a few thumb tacks
2 hinges
and the thermometer from the turkey fryer...

a few more steps is to scrounge some casters so it can be easly rolled in and out of the shop/furshed out of the way and when in use. and Probably slap a coat a paint on it. And I need some 1/4" rod to make the sausage hangers for the top rack yet on the next trip to town.

That looks pretty good bigsky, nice job. Another cheap alternative to a commercial unit is an old 40s, 50s refridgerator. No plastic in the inside to worry about. Make a vent hole for the stack in the top and put a hot plate in the bottom. Heavy duty racks are already there. My family has been using this ridgerunner engineered contraption for decades. It wasn't till 2 years ago that the old man broke down and bought a big commercial stainless steel unit.

galvanized hardware cloth?

Galvanized anything in the cooking environment can be dangerous to your health. I do hope you are using stainless steel.

I kinda like you and your many projects and hope you and your family are around for a long time to come.

Also, I would not add paint to the recipe.

I agree with the no galvanized components. Big reason they always tell you not to use refrigerator racks in grills. I might also be concerned with chemicals or glue in the wood sides giving an off flavor or off gassing. Good job, but you might look at covering the inside with some thin sheetmetal or something to keep the wood from being directly exposed to your food.

I couldn't live without my smoker.
