It is very important that you increase the off boost fueling. This gets rid of a large amount of the turbo lag. You should never need to slip the clutch.
If I were you I'd wait to change any gearing until after the engine is installed. The stock 1.2 gearing works well with a TDI, IMO. Overgearing them just makes them rev high wasting fuel.
You just get someone to pull everything from a wrecked Disco in the UK, or bring a complete vehicle over. Common, easy conversion. You need the TDI gearbox as well. The V8 gearboxes are different.
Sorry, that is overlap. You have inadeqaute fusion to the lower piece. You are running too cold and not welding the complete lower plate prior to allowing the pool to run onto it . I'm a welding inspector.
I would suggest running stick. It is quite difficult to get a poor stick weld.

When I lived in Australia, I had a Chescold cooler and it was fantastic. 1 week easy on a 5 lb bottle and would freeze at will in 40 C weather. Much more convenient than an electric fridge. But...they cost $1100 new. Easy to pick up...
