It sounded like you're original setup was good but the heater was fragile. You pack your own water for showering so why wouldn't it work with the bucket system?
It's really hard to know what is real with Chinese companies. They can copy paste about anything onto a website to try and get sales. The items shown look similar to what is available from a lot of different suppliers on Alibaba.

Yes, sandwich panels bonded together with extrusions at the corners is the most common. The ambition strikes couple did theirs with a frame. The walls were foam with aluminum skins.
I fabricated a fold down step and welded it to a swingout hitch. Works slick. No reason you couldn't put a ladder on one.
Something to know about swingout hitches is that they reduce the vehicles departure angle. It might not be a good fit on a rugged purpose over-lander.
