I don't see any issue in lifting the CRV like you have and adding bigger tires. Now if you start planning a SAS or SOA swap, then you're defeating the purpose.
I have thought of picking up a cheap 1st gen for long road trips where gas is a bigger burden.

Im so jealous of your location and your ability to get out and enjoy the wilds of the world with your family. I hope to some day have that ability and to some day have a purpose built rig like yours.

I think a land cruiser is a great first car. The mpg will keep him close to home and out of trouble and like you said, he won't get rid of it.
I drive an 02 xterra 4x4 but mine is an automatic.
Regardless of transmission, if you know how to drive a standard, four wheel drive should not cause jerking and jumping around. I'd look elsewhere for a different xterra.
