The only thing I can think of is a super zoom. You have everything else pretty well covered. A canon 100-400L might be a good choice for long landscapes and for wildlife.

They are both worth the extra work to get there.
Big bluff is a little bit of a hike, but if you make it an overnight hike, you can catch both on the Centerpoint Trail.
Just got back from a backpacking trip on the buffalo...the only big landmark you seemed to miss was hemmed in hollow waterfall and granny henderson's cabin.

RTT looks great! Have you ever felt the need to move up to 33's? It seems like you and I do the same type of overlanding and I'm about to need a new set.
