Put the OME 150kg front, 300kg springs on it with a set of good gas shocks. OME makes those too. It's what I run on mine and I don't have any sway issues.
Get over to Phalcon Overland in Vista and pick up one of their 45 liter Bluetooth enabled fridges, it's under $400 bucks. Go to just about any online 4x4 part seller and get a 15-20ft 12v fused cigarette adapter and run it to your battery. All problems solved.
For rocky terrain you'll be airing down your tires to 8-12 PSI anyway, between the two sizes I'd prefer the larger for the larger countouring contact patch against rocks.
Suspension travel between the two would be constant, the same. The limiting factor would be body/fender clearance for the tire. My Jeep has run both sizes, and can "stuff" both in the fenders. The reason I run the smaller of the two sizes now is because of my gearing, NOT clearance issues.

Anxious to see pics of yours. I just built a camp kitchen, so I'll use that for a while but the idea of a big dry box that I can quickly convert has an appeal. I do have so build time to change it up. My tires and wheels are on the way.
