Get a GMT800 Tahoe with the G80 rear locker.
Cheap, reliable, plenty of power. A nice step up from a ZJ. I had two XJs and can't go back to something that small, even though a full-size is still really big to me.
King makes 6" travel 2.5s. JD Fab recommends them with their mid travel coil over setups on the GMT800.

I dropped the fuel tank on my Silverado and it was much easier than I expected. Out in probably 45 minutes, back up in half the time. On the ground with a near empty tank, with a buddy helping stabilize.

I don't think you'll have a problem with 40-50k. I hated my AT3s but they weren't even 50% worn with 40k on them. I have 20k on my K02s and they still have the nubs on em.

Only put HIRs in your high beams, the lows will scatter a bit and can bother other drivers on the road. I put all TYC headlights from amazon on my 05 Silverado and I'm very happy with them.
You know that truck has a big block and they were doing a front dig with a 5:1 low range and 37s on when that front diff blew right??? You can easily break stock 30 spline outers in a 60 doing that.

Size is up to you, only you can say whats too big or too small for your travel needs. I do a lot of beach stuff. The Suffolk permit allows you access to overnight camping at the limited access at Smith Point and Theodore Roosevelt in Montauk; but unfortunately you need a "self-contained camper"...

I looked at a couple Tahoes, I'm 6' and could sleep in the back no problem with the seats folded down. It depends on how much gear and people you're bringing along... Most of my trips are me and my dog, so that was more than enough room. Don't forget you can easily add a roof...
