Not sure the budget, nor if you are wanting to go with new (warranty and such), but the VW Atlas is worth a look- 3rd row seats and the second and third rows lay flat for plenty of room to sleep in. Not for extreme offroad, but really surprising on forest service roads and such with decent tires...

If going gas, why not consider the Transit? AWD available...

I had the Carhartts on a couple trucks and love them- breathable, washable, durable and great fit!!

X2 on the Carhartts, love them! And a good tire size is the 285/75-18, might fit as is, level kit at max... However, something to note- when you go to a light truck tire, aka load range E, you will trade off the ride a bit. Not bad, just firmer.
