As long as they keep the original schedule all will be well IMHO. Often happens that once work has started more and more unexpected issues keep popping up that prolong the job to the point where the shop is wondering why the heck they even took on it and the customer is wondering if they don't...
Indeed, nice work. Also yes, definitely tarp up the camper till the rains pass - if the wood around the leaky windows gets wet you will have to wait a bit till it's dry before you can proceed with the reseal, and that is almost as annoying as waiting on fresh paint to do its thing.
Yes having two sets of wheels and tires is nice. However, switching between them does get annoying after a while, especially if you DD the truck during the week and then take it out in the wild every weekend...
I don't think you'll be able to pull off the 1/2" thickness - remember adapters use two sets of studs, thus they must be thick enough to cover the depth of the lug nuts holding the adapter onto the factory studs. IIRC the shortest one can go for this reason is 1" and that's for cars, your truck...
Isn't there a 5100-series Bilstein for that truck? Find the part number and look on Amazon and Ebay, we found 5100s that would work better for one of our trucks online for cheaper than standard-length 4600s, you may luck out like that as well.
Not sure how your lance is set up on the underside, but if you have an open bottom with lots of empty space around the holding tanks you can fill all that space with fiberglass insulation then close the whole thing off with marine-grade plywood. Just obviously ensure you have absolutely no leaks...

Yes I saw you added the steel pieces, good call. We used a variety of Simpson straps throughout ours, and everything is glued AND screwed together. Can't be too overkill with these things, they were never really meant to handle anything worse than a graded dirt road... Dead bolt is a good idea...
Very nicely done! Yes even the wide-ratio ZF's reverse leaves something to be desired, it's an improvement over what the Mazda and the close-ratio diesel ZFs have, but still... IMHO the 8.25:1 reverse of the NP435 is perfect with 3.55 gears and 32"-33" tires, it is low enough to get the job done...
Nice steps. Just make 110% sure they can't unlatch and extend while driving. Seen it happen, not quite as dramatic of a show as a tractor-trailer with the landing gear down flying down the interstate in a shower of sparks, but not that far off either :D

Yes you can do away with the air pump. Never did like them things, they're just fine when new but at the age even the newest of these trucks are at now they can be prone to seizing up (and naturally that takes your belt out). Reman replacements are both expensive and low quality, waste if money...
norcal*PWRstroke, we did indeed take some pictures of our camper repairs, they were on an external hard drive along with a bunch of others, however that drive got dropped a few months ago and the it must have suffered some physical damage as a bunch of data got corrupted - we lost the camper...
