The suburban is surprisingly agile offroad, everything in those pics is doable. If you want 15ish unloaded the engines choices are the 5.3/ 5.7/ 6.5 diesel. The diesel can be a good engine with the proper upgrades, but I would only recommend that motor if you are comfortable doing your own...
Depends. Like goodtimes mentioned in more difficult off roading its more of a requirement. Also if you are driving the anchor vehicle of the group (largest) it is a good idea to keep it from getting stuck.

Whether the trailer is offroad capable depends on your definition of that. Dirt trails that would be up to a 3 or a 4 difficulty (on the 10 scale), those trailers would be ok.

Well exhaust is ready. Took it for a drive today without hearing protection, nice upgrade. Used a sound meter app on my phone, reading 69-70db at idle, 78-79 around town with the turbo whistling, and 84-85db cruising at 50mph with both vents and all 4...
The 6 speed medium duty is strong enough but doesn't have enough of an overdrive. The current 5 speed has a .79 overdrive that can be upgraded to a .69, great ratio for the truck but makes for some big gear ratio gaps. A .73 ratio and at least 6 forward gears would be ideal. Have a lot more...

Good point on the weight concern with the trans. Fully loaded I'm looking at 17-20k pounds, the lighter transmissions would be nearly maxed out constantly. Do you have the specs on the Fuller? Will be a long time before I do anything with the trans so the more research the better.

Got the truck inspected and about halfway through rerouting the exhaust to the rear of the truck. Ran the 4" tubing between the battery box and the passenger floorboard
