I had a 08 F250 V10 with 5.13 gears and 37's. Was a nice truck. Plenty of power with the 5.13's . It loved gas though, which shouldn't be a surprise. 3 valve V10's don't have cam phasers which plague the 5.4's. Just keep up on the oil changes and your good. Mine never burned any noticeable...
You will be amazed how much power a down pipe and exhaust will add. Good call on the gauges. you will need to keep a close eye on your EGT's with the extra fuel the tuner will add. A intercooler is next on my list after i get a trans built for it.
For you pan hard bar are both ends threaded? For mine to shift the axle over I threaded it out till i got the holes lined up and bolted it in place. Then I took it a good alignment shop and they cranked on the tube with a pipe wrench till he got it centered.
I currently have a 1996 F250 with a 7.3. Love the truck. 302,000 miles. I also own a 2008 F250 with a 6.8L V10. With that said I dont plan on ever putting my obs in 4x4. The 05+ Ford superduty's are the best built trucks out there from a body and chassis perspective. Roomy well built cabs...

Just put it manual mode and downshift as needed. The truck shouldn't let you downshift in a way that would over speed the motor. Also dont worry about high revs. The higher the revs the better the engine braking.
