2.7 seems to be the most popular engine choice around me as well. Lots of people want the 3.5 or 5.0 but don't need it, they probably don't need a truck if they are being honest. 2.7 is still plenty of motor to haul and tow though not knocking it. Its performance, at least on paper, is better...

Probably the profit margin on a full build vs parts. They might also be geared to building each part by hand so to speak instead of having jigs, fixtures, etc to run off parts. Same personnel putting lifts and other upgrades to the full build trucks could be the same guy that is their in house...
