Been using a Volcano for almost 4 years now. I cannot think of anything bad to say about it. Wood, charcoal, propane plus dutch oven means you can cook just about anything you want on the trail.
I was worried when I first recieved it as it was super heavy, after opening it up I found the shelves inside would come out with the removal of about 30 screws.
Empty it weighs about 15 Lbs with dry goods, stove, plates, cups etc.... for a 3 day boondock it only weighs 35 Lbs plus it is the same...

Mine is Medic Kit with the inner shelves removed.
The tables are the top and bottom lids for the kit. You can store almost everything you need in it with a small 2 burner stove.

There was a shortage around 2006-2009 when Aussie could not meet the demands for the 44a locker I waited for almost a year and could not get one NEW shipped to my home in Clovis NM and beside that it was a lunchbox...

OK I have to throw this out there.
All of these vehicles are great choices! BUT I was once told years ago that you take a stock vehicle and throw lockers front and rear and it will go fewer places than a mildly lifted stocker.
WHY you ask "ARTICULATION" on any trail if you can keep all 4 tires...
I am partial to Jeeps so take what I say with a little salt.
I would build an XJ first if it is just you and the dog. I am the same height as you and can sleep in the back however a RTT will get you a bunch more room.
First choice would be later model XJ with an aftermarket 4" lift 33x10.50...
Camper loaded with all gear is 1686#.
The jeep I flat tow so no load there.
This is a great setup as the Jeep will follow me in almost any rough terrain I wish to drive up or down.
