Other than measuring the primary and secondary winding resistance there isn't much you can do. The problem is that you can have heat driven dielectric breakdown which is pretty much impossible to find using a meter since it is an intermittent fault.

Next time you notice it, kick the cruise control on and use that to accelerate. If the truck accelerates like normal the sensor is probably on its way out.

I had an issue with the stock headlight plugs, and the aftermarket driving light fuse on my mini getting hot and melting. Based on the plug, it looks like you got high resistivity on one pin that took out the rest. Do you use dielectric grease on the plugs when you connect them?

Turned out the accelerator position sensor was the culpret and it has since been fixed with a ntk replacement from rock auto. The truck has been running well since then and I have just been doing normal truck stuff with it. I do need to track down the leak in my airbag line on the drivers side...
What bearings did you go with? When I was prepping for the my manual hub swap I read nothing but bead reviews about the aftermarket ones. The OE bearings cost almost as much as the drive hubs but I figured if they are what keeps the wheel in place, its worth the cost for peace of mind.

If you have not already, consider doing the inside surface of the fiberglass fenders with the bedliner. Supposedly it helps prevent spider cracks from popping up through the paint due to rock impacts on the inside of the fender.

The factory crash structure is suuuuuuper cheesy. I would reconsider that setup. When I did my install, I ended up using 1/4" plates to cap the frame, then welding the plate to the upper portion of the frame with loads of bracing to tie into the stock frame section over a bigger area...
