I'd say inconvenienced more than disabled. Seriously, I know you are having to really expend some effort for the things you do, and I hope your attitude is contagious.
I see you got a limb missing, but I would be hesitant to call you disabled. Your in a place where a lot of fully functioning folks probably would not go. More power to you. I suspect you will accomplish most of what you wish to accomplish in life.

You obviously got a bad case of the red ass for Toyota, cant say I blame you, but I dont know of any Tacoma's who have had that problem. I'd be curious how many documented cases of damage there are. I mean you have been having these issues for a year now and got no bites on your original post...
I guess you can look around at satisfied high mileage Land Rover owners and satisfied high mileage Tacoma owners and decide if the Tacoma is as bad as you think.
So what are the safe hill climb specs for other manufactures?
I have a KLR, not sure I would choose it for a first bike. With your weight limit of wanting to haul it on a hitch carrier, I would probably look at a 250 Sherpa or just a KLR 250 on up to maybe a DR400 Suzuki. The ability to haul it on a hitch and good highway manners may not go together...
The Ryobi will give you 2 days easy on low, possibly 3 using the 4ah battery. The bigger ones will give you a little more. Just be warned if you let them run until they die it can kill a battery. I use the Ryobi LED light and 2 of the fans in my tent trailer all the time.
