We don't, haven't made fuel tanks in years. We get a new Dorman steel tank and shorten them for the 12-14 V10s.

You can but it's not recommended. Will add stress to the drivertrain. It's like riding a bike and starting out in 6th or 8th gear. Will be hard to get moving but easier once you're up to speed. There's a calculation to get the gear ratio close to stock with oversized tires.
