We bought our 96 SR with 214k miles on her to replace our 98 with 172k miles because it was a much nicer one owner rig with complete service history, age doesn't matter as much as the vehicle's history.
The torsion bars are under constant load and there is grease on the splines, so in theory they shouldn't make any noise ever. I have a creak coming from my front lower arm bushing closest to the front on the driver side, bushings are fine but the creak is just there to annoy me.
"Cool" would be a set of RCV's and 8-10 inches of travel, but if you are trying to trim bump stops and/or flip the ball joints save yourself the effort and busted CV's. Best bang for the buck is improving rear travel.

Really only applies to AWD vehicles that rely on sensors to control traction, you will be just fine to replace the two and start with the new tires on the rear axle as mentioned.
If you google "Pajero torsion bar crank" there is a video that shows you EXACTLY how to do it, if you have 20 minutes and a tall jack plus jack stands it's very easy.
Yikes, it will be a learning curve having zero experience with towing, I have towed a lot and wouldn't even want to do that with any Montero. Why not just buy a truck to tow with?
