Used cables are taken out of service for a reason. They lead a rough life, they are exposed to chemicals, run over by vehicles, the insulation get cut, the strands get corrosion from the cuts. I see how those cables are treated in the field and would not recommend using them unless they are...
I wouldn't trust the insulation on jumper cables to hold up to being out in the elements and a lot of jumper cable wire diameter is not up to what is advertised on the package. I would use welding cable, it is very flexible and the insulation is very robust

The most compact and lightest way to build it is in one piece. If you don't mind heavier and taller by a few inches then body on frame has many advantages
I didn't notice this before but your axle/suspension is really boogered up. You have what apears to be a 4 inch dropped axle and then super long shackles to raise it back up. I would recommend buying a new straight axle with brakes and then shorten up the shackles

That Ford plug is rated for 150 watts which is next to nothing. The other is rated for 15 amps which would probably cover any load . How many watts or amps do you have available?
Those trailers are very overbuilt and rugged. I wouldn't hesitate to put 2500lbs in it providing my tow rig had enough brakes. I regularly haul 2200lbs in a home made trailer that isn't nearly as strong as that. You have a real project in front of you, lots of unusual mods to undo on yours. I...
