Keep it simple
Get or make a grill (rectangular of circular) that you can put over your fire ring and coals.
Burn off the grease and put it in a bag for storage.
Use paper plates to save water and make clean up easy.
I use a teflon pan on the coleman stove.
I think it is getting harder to find a reliable vehicle in that price range. You are talking about some long road trip miles 2x a month.
How about a Tacoma?? That would be great for you and your son.
Toyota and Jeep parts/dealerships are easier to find than Rovers and most vehicles in that...
I have a small Canon with a view finder. I bought it becasue it had a view finder.
I use the view finder more than the lcd screen.
Great pictures and I use the camera more than my Nikon DSLR
