I think it would be a bad idea. I'd be afraid of leverage strain on the U-bolts. If they broke and you were doing any kind of speed, it could be bad. Axles are cheap; if you want height, go with a taller spring mount and longer shackles.
Most folks will use an eye-to-eye leaf spring for their trailers. Some trailers will come from the factory with slipper springs - to be blunt they suck - don't go there. Eye-to-eye springs have a shackle at the back end just like on a Jeep (or the old military trailers).

You don't need a rotating pintle in your situation - your lunette ring rotates. That is the original multi-axis hitch set-up from the 40's (and still a great design).

You don't have to spend a ton of money on a trailer. You can build one that will meet your needs just fine with a modified Harbor Freight trailer frame.
