A lot of times boat trailers have fairly small and weak axles (and small tires). Boats may be what we think of as "big", but they don't weigh as much as you'd think. Just something to pay attention to. Otherwise, they make good staring points for a little adventure-type trailer.

Looks like a great starting-off point for a little adventure trailer.
Should be easy enough to cut off the current tongue and weld in a longer piece of 2" receiver tubing to your length.
I hadn't thought of that; that might be an option. I'm not wanting new fenders right now (truth be told - I'm looking for an inexpensive option initially).
I recently added some larger tires and rims to my trailer, and now the tires stick out from under the fenders. Anyone have any ideas or places to get flares for these kind of fenders (picture attached)? I don't want it to look tacky.
