Well my search for a water can to mount to my fuel can racks is over. At least I think so. I needed a water can of the same type of construction as the Blitz fuel cans that have the lip around the bottom, as that is how my mounts work.
In the end I figured I could make a "basket" that would hold a plastic water can and figure out a way to make that basket mount into my gas can rack. Today with a couple of heavy duty shelf brackets from Home Depot and some diamond plate aluminum (heavy 1/4" stuff) I had lying around, I did it.
Now I can carry water when I like, or pull the new bracket off and carry a fuel can like it was originally designed to do.
Here are the photos.
The vertical section in this photo is the original mount, I pulled it off the truck while working on this project. There is a gap between the vertical and horizontal diamond plate that allows the vertical section to fit into the groove on the bottom of the fuel can mount. When it's remounted on the truck simply unscrewing the wing nut releases the entire diamond plate section, leaving only the vertical clamp for fuel cans. (And yes that's an old extra socket used as a spacer below the wing nut. Sometimes you use what you have)
