If it wasnt for the job opportunity that opened up down here in Florida, my wife and I were having trouble leaving Utah. We were actually starting to look for property because of how much we fell in love with it
Depending on how long you're planning on visiting, I'd recommend the White Rim Trail (Give yourself a minimum of Two Full Days), Arches National Park (At least one full day of hiking a few of the choice trails, but I would think you could spend a few months in this park and not see everything), Canyonlands National Park (Again, give yourself at least a few days to touch both ends, not including the White Rim Trail, but a few days of solid hiking would be a minimum to scratch the surface)
This doesnt even include Moab which in and of itself is loaded with hikes, biking and world class off-roading.
If you have the time, PM DR. Moab and XJ Banker and see if they might not be planning a weekend around the San Rafael Swell area. They were nice enough to give us some guided tours that were out of this world and offered some of the best scenery we've seen in North America. Truly top notch members of the forum and went out of their way to make sure my wife and I had a great time, which we did and then some.
I'll try and post a few shots that still 'WOW' me even though I saw them first hand.

Exploring a Uranium Mine up in the San Rafael Swell with Clint, Ryan, Nanette and Steve
Camped above Moab on Hurrah Pass in our Camping Lab Tent
Goblin Valley State Park which is between Moab and San Rafael Swell, a great day trip highly recommend by Ryan, Steve and Clint, it was so worth it and is literally something that is out of this world

That is just a small collection. Check out a few of those links and they'll bring you to full galleries of our visit. It was amazing, and Utah is one of our favorite states by far. Try and plan as much time as you can to enjoy as much as possible, its an awesome state

I'm not that good, I just have a camera body that shoots 5 frames per second, and didnt post the 2 leading up to it and the one behind it....LOL
That 1st image was used as the design for the t-shirts for the DualSport Utah 500 Charity Ride this past fall which was pretty cool, so I guess someone else liked it too
