If it wasnt for the job opportunity that opened up down here in Florida, my wife and I were having trouble leaving Utah. We were actually starting to look for property because of how much we fell in love with it
Depending on how long you're planning on visiting, I'd recommend the
White Rim Trail (Give yourself a minimum of Two Full Days), Arches National Park (At least one full day of hiking a few of the choice trails, but I would think you could spend a few months in this park and not see everything), Canyonlands National Park (Again, give yourself at least a few days to touch both ends, not including the White Rim Trail, but a few days of solid hiking would be a minimum to scratch the surface)
This doesnt even include Moab which in and of itself is loaded with hikes, biking and world class off-roading.
If you have the time, PM DR. Moab and XJ Banker and see if they might not be planning a weekend around the
San Rafael Swell area. They were nice enough to give us some guided tours that were out of this world and offered some of the best scenery we've seen in North America. Truly top notch members of the forum and went out of their way to make sure my wife and I had a great time, which we did and then some.

Goblin Valley State Park which is between Moab and San Rafael Swell, a great day trip highly recommend by Ryan, Steve and Clint, it was so worth it and is literally something that is out of this world
