The main reason I run a custom back space 4" with my 285 70 17. ( no rub at all )
My winters with the stock wheels (285/70/17) rub when at full lock on the UCA's, so I don't do full lock.
I don't recommend wheel spacers for anybody running a daily driver (trail rig only). Makes the steering wobble and give an uneasy feeling to the wheel. I've ran spacers in the past and hated them.

Interesting. You are the only person I have seen that has complained of these problems using spacers. What type of spacer and how big? Those using the Spidertrax 1.25" spacers have had great results. You can find a metric ton of good reviews with none of the issues you mentioned both at www.toyota120.com and www.fjcruiserforums.com. Several of the guys I know here in town that wheel with us have the Spidertrax spacers, with most having well over 50,000 problem free miles.
