I've noticed if you keep adding layer over layer of seasoning to cast iron eventfully you can have the top layer flake off. If it ever happens just strip and re-do it. It's a long process but very simple and not time consuming. Perfect for the winter when you're waiting to go back out and use it again.
Do this method with the flax seed oil on bare metal and you'll have a base coat that lasts forever unless you truly punish it.
And the variation I'd recommend is don't use paper towels to wipe on the oil, use a piece of cloth you're willing to dispose of. The rough surface of some cast iron will pull fibers from the paper towel with will become part of the finish making the bumps worse.
