you know you could waterproof the sides since there will be plenty of other areas for it to breathe
but the only thing you dont want to use something that wont let the fibers swell up
I have no clue what that is but sure you could find out
I would say if you get one try it then decide if you need to waterproof it more
as far as setup to cooking it depends on how you set things up etc..
I did not use the fly but if I was spending more than 2 days I would
setup time ? I just used the corner stakes on the room but I could have the tent deployed and staked in minutes
I kept the sleeping bags and pillows up there so tops 5 minutes total
cooking you can fold down the side door keep your stove there and my side cabinet is shelves I ripped out the foam stuff and spices and other stuff is in there so you can be cooking very quick
time wise ? I am not sure but usually get my family settled in and everything out and including chairs around the fire and everything under or around 15 minutes or so
a few nights I pulled in late I was deployed and cooking in less than 10 minutes

you can kinda see the shelves here instead of the foam
I am going to make a custom pull out setup soon
also I kept my tent flaps rolled up usually saved me doing it after I pulled the tent out
notice the nose wheel down
I put down the rear stabilizers then drop the nose wheel and give it a small turn to help it put pressure on the rear stabilizers and the thing is solid
