Welcome to the Portal, and thanks for the info and pictures.
I'm really jealous of your truck. I have a wife and two daughters I would love to take on extended journeys (one or two months initially) and the only crew-cab (doka) cab-over truck options we have here in the US are smaller 2wds like the Isuzu NPR (with a 3.5 US ton capacity). The only 4wd cab-over readily available is the Isuzu FG, and then only the standard cab (3-seater) model. I could import one, but it would have to be more than 25 years old to meet federal import restrictions. But enough of my whining...
Having said that, I am really interested in details of your camper and your plans. If you don't mind, I have a list of questions:
What is your family size and composition? (number, age, sex)
Are you keeping the 7 seats in the cab, or converting part of them to something else? In the plans you posted it looks like you are modifying the back seat?
I think I make out sleeping arrangement for three in the cabin, is that correct?
What are your cooking plans? Are you planning on cooking/meal preparation outside? Your cabin plan looks a little cramped for cooking inside, but it may be my interpretation.
Will you have indoor toilet facilities? Indoor or outdoor shower?
With a truck height of 3.4 meters, you exceed container height by about a meter, so I assume if you ship over ocean you plan on roll-on/roll-off, or having it craned on and off, (either flat rack or cradle) right ?

Jean, it is a real uncommun layout you have planned, and it seems clever and very efficient in terms of space optimization.
Just one point : the partition wall between bathroom and chidren beds is surprisingly angled. Bed side is understandable due to required free room for body, but toilet side is not easy to arrange, don't you think ?
If I understand right, the lower bed is used as bank as well ?
The access to the parents bed, and the go-through to cab are a little bit hard for "aged" people like me..., but are good solution to "save" floor space.
Big interest to see more details of the interior construction !
