Peach Cobler

I generally use a sweet pie dough crust instead of a biscuit topping. An oatmeal based crumble also makes a good topping. As stated by Dave, precooking the filling makes cooking easier particularly when you are making more than one. Normally, I'll add chopped dried apricots and nuts to add texture and flavour. Blackberries go good with peaches. Nice thing about cobblers is that you have plenty of room to experiment.
