The pelican box had a roller/handle set-up on it. I removed that piece and used the same hardware with 1/4" flat bar I had laying around to mount it to the carrier. There is zero flex or play in the mounting.

Loving these ideas. Any concern over items behind the stove not being accessible while cooking due to heat or the wind screen?

Not really, only a minor inconvenience if proper planning is not done.
