Some Arrogant Bastard with Boddingtons to follow. Sparkling cider for the kids. Mainly snack foods tonight. Just enjoying a safe night at home with Suzi and the kids. Maybe head up to the snow tomorrow.

Super Bowl Chicken Tortilla Soup

Been simmering all day...nice and slow. I made 2 pots. 1 for the wife and daughter, 1 for the "men" with a little extra kick. I know I'm not the only one cooking for the big game...

Tonight it's.....


London Broil and veggies in the toaster oven for one.

If it's too cold and stormy out to BBQ. And you just don't know what to do to cook for one. London Broil and veggies in the toaster oven works great! You don't have to fire up the huge oven!

Included tonight. Zucchini, Red Bell Pepper, Jalapeno Pepper, Red Onion, and Broccoli. Seasoned salt and cracked pepper.

I like to dip my veggies in Buttermilk Ranch Dressing, and put it on my Baked Potato.

Baked Potato goes in the microwave. Salad on the side.

Yummers!


Easy clean up too! I use foil on the broiler pan to keep it clean. Then I put a second sheet on the broiler pan to cook on. When done cooking, just fold up the messy foil and throw away. Your broiler pan below is still clean with a fresh sheet of foil!
