Well this offload worldwide stuff is sure a learning curve. I want to pick a radio/radios and appropriate antenna(s) for offroad both in North America and worldwide. Where do I get information on what to buy? What are others using? I also hear you have to "hide" your equipment in certain countries.

as far as I know UHF / VHF are not considered long distance communication, in the case of UHF its pretty much line of site unless you utilise a repeater.
For worldwide comms you need HF, which in OZ isnt really cheap to set up and requires an annual subscription.
The new generation of pre paid satelite phones offers an affordable alternative to radio based communication and allows better mobility
plus they're easier to use and hide if need be

I have been using the Micro-Trak RTG (Ready To Go) with great success.
