This evening, travel with me to south east Asia to the Kingdom of Thailand, formerly Siam. I made two Thai dishes: Creamy Tom Yum Goong and Thai Holy Basil Stir Fry or Krapow.

Shallots, galanga (similar to ginger), lime leaves, Thai chili, lemongrass

Today I had the pleasure of enjoying a delicious meal: instant pot chicken with veggies. It was a wholesome and satisfying dish, perfectly cooked using the convenience of the instant pot. (not overland cooked) Testing out the sous-vide method lately, I like it so far - main advantages for me are you can take something straight outta the freezer, no defrost and sous it for 1 hour, 2, 3...don't really matter, you can't overcook it.
Sear a couple mins to done, no need to rest, can carve and eat immediately
Experimenting with cheaper cuts than the usual ribeye - this is top sirloin at $11 per lb, saved the jus for dipping, chef's kiss

I used my new 1-day old Carbon Steel Wok, and practiced a little Camp Kitchen work. I made some Cheesy scrambled eggs and coppa ham, with my "Overlanding Kitchen" or Truck Kitchen if you will.
I made a video showing the 1 min cook, plus how a properly seasoned pan can do cheesy eggs and be no-stick wipe clean. I also linked my video in description, on how to season a wok, if anyone wants to see. So, here's a fun quick Overland Breakfast in my side-kitchen setup. Chicken, black beans and rice and cheese burrito.
Large flour tortilla with some 3 pepper colby jack cheese.
Add the beans and rice.
Then the chopped grilled chicken breast.
Into the oven to melt the cheese. Add salsa
and roll up into burrito.
For lunch today.
Moms tuna salad.
Made into a Tuna melt with white American cheese on Marble rye.
Some black grapes and an Ice Black Cherry sparkling drink to wash it down.
Knowing that I would be eating Super Bowl snack, junk food, the rest of the day, I started off my morning with my traditional healthy breakfast smoothie:
Blueberries
Banana
Homemade made apple sauce
Orange purée
Walnuts
Uncooked spinach
Some green beans left over from dinner
Pumpkin purée
All blended into 1/3 of a cup of organic brand
It tastes the whole lot better than it looks
And it was followed up with a cappuccino of Café du Monde chicory coffee blend
Now I can eat crap food for the rest of the day without any guilt
Today I made a burrito out of the blackened spicy pork chop I made the other day.
First I take some of the rice and pork out of the fridge, chop up the pork and put them in a pan.
The pan goes into my RV oven that has the pilot light on all the time. I do this around 2 in the afternoon
and let it get up to room temperature in the oven.
Then I assemble the burrito using a big flower tortilla, some Boars Head three pepper Colby jack cheese
the rice and pork chop and a couple of scoops of Newman's Own chunky salsa.
Into the oven to heat the tortilla and melt the cheese, roll up and plate with a Negro Modelo beer to wash it down with.
