Sliced one up to have with some of the yellow rice. BBQ sauce added for flavor.
The other one will be shredded up and used in a tortilla.
Dinner tonight is leftover pork chop, some yellow rice and three pepper Colby jack cheese made into a burrito.
I will be drinking the Pacifico I found an18 pack of for quite awhile.

Lunch today is half a toasted pastrami and cheese on rye sammich. I can't finish a whole one so half it is.
Pasta salad and some Dr. Pepper. This one is made using brisket pastrami instead of my usual top round pastrami.

Made a couple of pans of Shepard's pie. One for me, one for my buddy.
Three pounds of already cooked shredded beef from Costco.
Onions, garlic and spices. Simmer for a bit, then add some tomato paste.
Add some beef broth and simmer some more. Add a couple of tablespoons of flour to help thicken
Finally put in the vegetable medley with peas, corn and carrots.
Top with mashed potatoes and parmigiana cheese, into the over for 40 minutes.
Didn't have any as I wasn't too hungry , but went in the fridge to firm up and sit overnight.
