Looks great, Rob! An impressive build, for sure.
A few questions for you...
Is that a Mantec upper storage shelf (link) in the rear? I didn't think they made one for the Disco 1, but only for the Disco 2 according to their website. Not sure what the difference would be, though. Did it require any modifications to install in your D1? Is it a straightforward install?
What approach did you take to repair your rear cargo floor? Any more photos of those repairs?
Any more photos featuring your rear cargo door panel and what looks like a fold-down table?
Nice work with it all! Looking forward to seeing photos from your adventures!
I'm looking forward to reading about your travels.
On the earlier air filter comment, I agree, more flow usually means more dirt in the engine.
Here's a air filter test you may find interesting for choosing a paper filter. http://www.nicoclub.com/archives/kn-vs-oem-filter.html
On your snorkel you might want to consider a change in the top, especially if you're going to be in extremely wet or dusty conditions.
I'd replace the top with a centrifugal pre-cleaner. Your paper filter will last a lot longer and stay drier.
Here are some.

I'm sure there are others, but you can probably find local dealers of at least one of these in your area.
Most of these are probably available in the UK and I'm sure there are some others there.
Curious why you removed hitch. What you put in as replacement tow point looks like it will cut a strap pretty quickly.
Ground clearance. I don't know anyone who uses a strap without a shackle? And you should never recover using or attach a strap to a tow bar/hitch. That's how accidents happen...correct me if I'm wrong.

For the D1 most of us use the tow hitch on the back for recovery since it ties into the frame, assuming you used good spec hardware to mount what you have I think yours will be fine too.

That's ok if you have replaced with the tow ball with somthing suitable to hold a strap/shackle on the vehicle.. A tow bar/ball isn't safe for recovery for the most part in my opinion. You run the risk of it coming off, not somthing I want to happen.(again)
I will add though. There isn't much choice for d1 or d2 owners to change to. If any.
