Nice job all round. :) I like the one piece tongue to rear receiver tube. You could turn that into a "rotisserie" with a couple of engine stands to speed up the frame welding process.

Mine's still under construction but I don't expect to have any problems. I'm repurposing a trailer that had a large welder on it and "tighter" fenders so I should be OK. I've loaded it up but I haven't put it on the road yet.

That sounds about right. I screwed 3 short pieces of 2x4's together, placed them on top of the tires, placed the fenders on top of the 2x4's and called it good. That's 4.5" vs. your 4.75" so we're in the same ball park. :)

Regarding a swing out spare tire carrier, I'd be concerned about hanging that much weight off the back end of your trailer. I think your axle is far enough back that it won't be a problem but it's hard to tell from...
I modified similar fenders for my trailer. If you "snip" them as shown in the pic below them become super flexible. Welding the gaps closed is also easy and brings back all of the rigidity. Honestly, it's a half hour job!

Thanks. Lots to do yet. I just cut out most of the cargo area floor. No surprises really - it all has to be replaced. The uni-body frame rails are in great shape though!
