Is there a sticker on the axle housing with a serial number? If not, you can still figure out information about your axle by year of vehicle and shape of the diff cover. I recently talked to a salesman at randy's ring and pinion who was helpful in finding info on my axle.
Doesn't look like it would take much trimming to fit a larger tire in the rear of the Ford. The limiting factor on larger tires is usually the front tires hitting the firewall.

The shape and location of that tank make it more difficult to mount safely. It also may change the handling characteristics of your vehicle located in the far back corner. Have you considered using 2 smaller rectangular tanks?

What are your limitations on forest service roads? Might not take much to remedy. Concerning clearance, are you high centering the rear axle in ruts or scraping things under the belly of the van? How much do you drive offroad versus on? 5% off 95% on?
The main thing I see with your question that makes it hard to answer is that "arch" only provides a vertical dimension of a spring with no load. The stiffness of your springs will determine how much they sag when the weight of your van is on them which will also determine ride height and up...
