My EarthRoamer Jeep has a 15 liter (4 gallon) Isotemp Slim 15 water heater tank behind the passenger's seat. It heats the water off an engine heat exchanger and stores it in the insulated tank.
That tank is about twice as big as I need and makes things more crowded than I'd like, but it seems...
You may want to consider whether the engine's location under the floor might make it too vulnerable for your use. Or it might be just fine. You'll also have to decide if you're too constrained on tire choice.
