I had to extend mine as well to clear the tailgate on the JK. I can't say enough good things about the Max Coupler, it's absolutely silent on and off road, I highly recommend it!

It's possible that if mount an XO jack on the same side as yours it would lessen and issues with my tailgate/spare which on the JK, the spare hangs lower then the bottom edge of the tailgate. I'll have to do some experimenting and see.
One other thing to consider...ambient temperatures. If it's in the 90's or worse, there is no way a single battery is going to keep up for 5 days with no re-charging.
Use a socket slightly larger than the posts as a drift to seat the battery terminals securely but gently on the posts using a rubber mallet.
Then attach these for your extra wiring.

You make a lot of good points.
I like the idea of the bottle jack approach, just have to figure out how to brace it into position, but I'm sure with the right placement of 4 x 4's I could come up with something. And then sledge/ hammer/ etc combo to finish things up.
