Looks like you're using full square tube for most of your frame?
With panels bonded in to the structure I think an L profile would be sufficient and much lighter.

The use of the 80/20 for the top portion is a good idea. How long do you figure you can cantilever it out over the cab? Personally on any of these designs I'd personally like to see the portion over the cab as long as possible. With two kids and two adults we'll be squeezing four of us something...
Anyone have more info on these Kia K2700's? I stumbled upon them while looking at Hiace style dual cab forward controls.
It seems you can pick these Kia's up pretty inexpensive from Korea. The 2005 is the start of the latest generation and just about eligible for import into Canada.
Factory front swivel seat mentioned but no mention of changes to the rear. It would be amazing if they put the rear seats on a track system so you could slide them forward or back to adjust space and made them so the seat backs could be folded flat forward.

Ideally I would love to build a stripped down Alaskan clone. We ski a lot (or rather did ski alot before our 4yr old and 2yr old came along) so the winter warmth of the Alaskan style would be nice.

I'd say build it around a chest cooler and a removable kitchen. I think in many of the smaller units people would end up cooking outside more often then inside. A chuck box instead of a built in kitchen, that could be used inside sometimes, but usually used outside.
