The Gen III 3rd row seat is a bench. It folds down into a storage well under the rear floor and is quickly and easily removed altogether for increased cargo capacity. Prior to that they were split seats rather than a bench, and folded up against the side panels in the back.

You've just described the exact target of the Montero's prowess, especially the later (Gen III) models. They are certainly as comfortable for cross-country trips as anything out there, and much moreso than most. They can do a surprising amount of stuff with no mods at all, and mine did all sorts...

The Gen IIIs are 100% Japanese, certainly. Each generation of development saw further improvements. They started out strong and reliable and only got more so as they evolved. They have always been known for, and still are, their dependable engines and bombproof drivetrains.
