A vast majority of people are not running 37’s and armor everywhere. And most people dont tow a majority of the time. Even on this site.
So for most people, these engines make a lot of sense.

My 2014 steel body 3.5L that is 6200 lbs empty, has 3.73's, and 315/70R17's averages 16mpg in the winter and 17 in the summer. When I was still on 275/60R17 Duratracs I was doing 16.5 winter and 18 summer. It's highly variable depending on your driving conditions.
The 2.7L is in another league...
I absolutely believe that comment. My MIL has a class c motorhome with a 7.3L that probably weighs about 14000 lbs. I have an F150 Ecoboost and tow a 5500 lb travel trailer and am right around 13500 lbs total. Even at 6000-7000' of elevation, the 7.3 felt like it had a hair less low end torque...
I didnt realize the 5.0 had phaser issues. The 2nd gen 3.5 Ecoboost did/does for sure but hadn't heard that on the 5.0.
It makes you wonder why Ford seems to have done such a great job with the 2.7 but can't get the 3.5 or 5.0 to be just as bulletproof.
Another option you might consider is a set of 285/70R17's with a set of raptor wheels. You can score a set of cheap LT285/70R17's in a C-range in either a KO2 or Falken Wildpeak. They are the stock tire on the Wrangler and Gladiator Rubicon respectively and at lot of those guys pull the tires...

My 285/70's are very close to the washer bottle and any bigger they would be rubbing on it.
I own a ‘95 22RE currently. And not only that, but I live at 6500’ so its got 20% less hp and torque than advertised. 70mph is about all it can do on flat ground [emoji23]

TFLTruck just had a towing MPG comparison between a Ram rebel and new Tundra. They pulled a 7000 lb travel trailer into a headwind and the ram was constantly downshifting to 4000 rpm on small rolling hills. It was obnoxious.
The tundra just casually churned away at 2000 rpm.
Im really liking the 3.0 Duramax and if i was buying a truck tomorrow it would be a serious contender. I am on the FB group and seems like they are mostly sorted at this point. They had a few issues at the beginning but nothing crazy.
I also own a GX460. Its cool, and great for city driving...
It looks like the 3rd Gen Tundra's payload stickers are actually quite low. They put the same number on the payload sticker as is in the owners manual. So no matter what options and configuration your Tundra has, the payload sticker will read one of 10 or so values.

Fuelly.com is the only source I know of for real world mpg. It shows the 6.2 being maybe 1/2 an mpg worse than the others.

Yes and they do ok, but not as well as the 5.3, 5.0 or 3.5.
They are meant to run premium fuel. They have a higher compression ratio than the 5.3L. So they get crappier mileage on more expensive fuel.
The 3.5L Ecoboost goes rich to protect stuff when under high load. I've actually started using the AFR on my 3.5L to tell me when to downshift towing so that I keep it as high as possible. The stock transmission tuning will hold gears, since the torque is there, and the AFR will drop.

Depends how “oversized” the turbos are. If the turbo can flow 20% more air mass than the engine needs to make the engines rated power, then it can sustain full power up to ~6500’. If they are sized large enough for 30% more air than they can sustain full power up to 11,000’.

There are some guys around here with XD’s that have either 4 or 6” lifts.
Its not about new ideas. It's simply that Toyota builds their trucks to work and Ford builds them for the 95% and the people drive to the office who might casually tow a trailer. Hook a travel trailer up and try to tow through the Rockies in the summer and you'll be sorely disappointed.
