The torn boot may allow contaminants in that can cause premature wear of the axle, but since you're exclusively on highway I wouldn't worry about the drive. Wouldn't replace axle either, just boot.
Fold down the rear seats and you can sleep in any Cruiser wagon unless you're a giant of 2 meters plus. Going lift, big tires etc. usually isn't necessary unless you must have single digit MPG.
The truck in that photo is LHD. Pretty sure lots of places in the world have LHD 70 series, it's just that the ones Americans are used to seeing are the RHD Japanese imports. Aussies are also RHD.

You want to regularly travel at 70-80 on a long overland trip? Why so fast? LOL. I know different strokes for different folks, but if that's your comfort zone, it may be necessary to ditch the diesel 80. I'd second Clutch's advice and go with the 4Runner/Prado with a gas engine.
Hard to disagree with this. My preference is a relatively heavy AWD subaru with ABS brakes on snow and ice. Jacked up 4x4's with wide tires are, in most cases, more dangerous in slippery conditions than FWD cars, in my experience.
Considering your truck has low miles, HG replacement and no rust, the aftermarket headers and exhaust might not be a bad idea, especially since you're running oversize tires that rob power.
I'd want to figure out the potential overheating problem first though. Maybe it's not just a bad cat.
Unless it's 2wd, needing major repairs or neglected, I'd go with the cheap one. Not necessary to spend a lot of money for your wants and needs. Or for anyone else's, for that matter.:)
