    Can you DL the google maps in advance so it doesn't need a persistent internet connection? I preload the google maps in my area of travel in advance. (I also will use any of BCNpro, Locus Map Pro, Roadtripper, and iOverlander and have a Garmin with lots of topo maps pre-installed)

    You can get single person kits at REI and just outfit the number needed... some even come in a swish bag GSI infinity 4-person set also has single items available - only thing missing is the cup, which I think is an odd shape anyway...

    Cast iron griddle

    I have a lodge cast iron and camp chef steel griddle for my coleman 2-burner and camp chef everest respectively. The cast is HEAVY but heats well, the steel griddle works nicely on the everest because it's sized for it by design, but does get hot spots if the burners are too high. Just my $.02

    You could probably get by with a decent strap, but they do degrade when out in the weather for a while - a fixed bracket/mount like the one you listed would be ideal long-term. I kept a spare in my bed with crossed ratchet straps, but they were under a tonneau, and out of the sun and rain.

    It's never a bad idea to have a dedicated cooler, unless you don't have room for it... They leave it out because they don't expect much towing and it saves $ in assembly costs at the factory.

    I suggest you put it in a frame and affix the frame to the wall or sandwich it with a frame "ring" around the window opening. This will give it support around the area where the lexan is actually mounted... or get an RV window fitted.
