I've found it great as a "you are here" with offline topo maps in very fine detail, but I've never invested the time to do a lot of route planning off-road with it.

FYI - stock tongue length on an M416, M100, or similar is quite short (31") - you would need to extend it to fit a bike like in the picture. You could build a platform and put a dinoot tub on it (they can make the frame or you can go the harbor freight route) too.

A body lift will give the needed clearance to run larger than stock tires. Larger tires can increase flotation over loose soil, better clearance over obstacles, etc.

Sounds like you're off to a great start! Focus on the fun - the adventure will come on it's own (sometimes uninvited!) Do consider shade - we pack an EZ-up, but open areas at the right times of the day can benefit from adjustable shade to keep the sun out and prevent "shadow chasing" to stay...

You + Girlfriend + RTT + anything in tent is the static load with the vehicle at rest. That said, you can probably reinforce the cross bars without too much trouble.

Good idea - let us know how the prototype works out. Suggestion: Use shock cord loops on your tie-outs to prevent the snapping and pulling from yanking the grommets out of the tarp.

I've only seen racks that go over the top - never anything extending past the A pillar, and while many of them allow for the top to be folded down, very few allow a JKU top to be in sunrider mode.
