We live in our truck full time. We have a Fantastic fan in the roof almost over the cooktop. It works well to pull out steam and fumes. A dedicated range hood is not needed if you have good ventilation.

San Filipe is a nice spot. If you walk out into the shallows along the beach towards the peak in your photo you will find a bunch of hot springs. Boondocking is not great in Baja, you have to pay for all the best beach sites, it is dirt cheap though and you are in the off season.

They were built in Europe for a Europe of 50 years ago. Diesel vehicles, especially older ones are banned from many parts of Europe, especially big cities. These trucks are no longer suitable for Europe.
The older real round nose Mercedes have real character. They are solid overland vehicles if you can get a good one and can live with the lack of power. Parts are fairly easy to get in North America but you may have to wait a week or so for specialty parts. Great truck for North/South America...
Nothing wrong with that. I would just add that you are introducing a new way to fail. Leave the battery switch on both and run down both batteries. The jumper cables are cheaper and fool proof. Do you have/plan any solar? maybe putting the money towards that project.
