I have yet to install the front. I can post the lenghts when I get around to it. No coil spacers in the front yet. I ended up with 2.5 inches of lift on the front with the OME springs once the bumper was on. I'm not sure if it'll sag any more with a winch in there.

WJ is definitely the better choice in terms of room and offroad capability out of the box. If you're looking for fuel mileage I'd say your best bet is the Liberty.
It has a built in lip that prevents most stuff from getting in. I'm sure some snow or mud will find a way through. I just have to clean it more often. I also undercoated the inside of that lip in anticipation of it.

The OME HD is rated for 1.5 inch lift loaded. I'm sitting at around 2 inches of lift right now with the bumper but no gear in the truck. By the time I load up the Jeep to go camping with the fridge and all the stuff I'm thinking I'll be sagged down to the 1.5 inch mark. I'm going...

The bumper was a pain to install but I was expecting that after reading a few threads about it. Took about 3 hours to get it installed in total. Sliders were also a bit of a pain because of where you have to drill on the "frame".

I'd say it depends on what you do with your Jeep. If you're thinking of going offroading quite a bit I would keep the old one, that way it won't hurt your feelings as much if it gets damaged. Otherwise the AEV Jeeps are pretty sweet but you'll want to make sure you keep it for a while.
