I insulated the ceiling with 1" foam board
White FRP on the ceiling. I trimmed the edges with pine stop painted gloss white.

Thanks. It was relatively cheap too. I bought a 2x4 piece of oak plywood at Lowes for ~$18. I think a full sheet is around $50. If the finish doesn't hold up or if I change my mind, I can always cover it with vinyl or even ceramic tile.
Got some more done on the trailer.
I made the counter top. It is 3/4 oak faced plywood with a piece of oak molding glued and brad nailed the front edge. This water based poly was easy to work with and dried in 30 minutes! I used 4 coats and sanded with 220 between

On mine, on the outside, I put a pad lock on the door latch so that no one can lock me in. On the inside, I just use a cheep sliding bolt latch to keep it shut.
