The AEV lift uses front sway bar end link relocation brackets. And yes the tie rod adjuster can get hung up on them. I had this problem on my 2012.
My recommendation for a new track bar comes from the fact that the axle isn't centered, but also because the factory track bar ends up causing...
Check to see if the tie rod adjuster is hanging up on the AEV sway bar bracket.
Also you should buy a quality adjustable track bar to center the axle properly.
Am I missing the point? Why do you want to do this? Why have the empty space between the bed and the rack that would then be unusable?
If you're mounting at the roof line I'd figure it makes sense to just use a full canopy/topper so you have usable space at least.

Great point. I almost never stay multiple nights in the same spot, but I try to keep a cheap tent with me when I'm out in case I need to save a spot as well.

Aside from the higher cost it may make the truck more difficult to sell, and the camper will sit higher up since the flatbed doesn't sit flat on the frame. This will also increase the gap between the truck cab and the cabover.
I live in the same region and have absolutely no problem leveling my rig. A rock, log, etc works fine. Otherwise I prefer my head higher. It doesn't have to be perfect.

Consistently 15-16mpg in town, 13-14 off road (even with a lot of low range usage). As high as 18mpg highway if I'm going slow enough, as low as 13 highway if everything is working against me and I'm going really fast.
My JK is tall and heavy. But having a manual trans is probably a big help...
