A can of Plasti Dip might do the trick to coat the brackets.
I was thinking about going the other way, and cutting some thin aluminium sheet to go between the boat fittings and the body. Stick it on with sika or silicon, or just some really thin double-sided tape. Just a big enough piece to stop the legs scratching the body.
Great work though Skids - it looks fantastic. It's amazing what people can come up with on this forum. Have you considered some cheap laminex for the table top? I like the aluminium angle along the sides of the table - I would have continued it all along the side to give extra strength and to stop stuff rolling off the table into the dirt. I like Chilli's suggestion of rounding off the corners too. I'll be very interested to see how the finished product turns out.
Overlander - great idea wrt the hole/screw to secure the chain. I had to draw it out in the air before I could picture what you had done, but I think that's an excellent idea. Low profile, nothing to catch, easy to make and easy to service.
